Boneless Buffalo Wings
The first thing you are going to want to do is bread the chicken pieces and fry them. This is a universal breading that will work perfectly for all of the sauces in this post. The sauces can be prepared in advance or while the chicken tenders are frying.
Ingredients:
3 boneless skinless chicken breasts (cut into 1” chunks)
Oil (for deep frying)
1 cup all purpose flour
2 teaspoons salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
½ teaspoon paprika
1 egg
1 cup milk
Step 1: Heat oil in a deep-fryer to 375 degrees. In a large bowl combine flour, salt, black pepper, cayenne pepper, garlic powder, and paprika. In a small bowl whisk together egg and milk. Dip each piece of chicken in the egg mixture, and then roll in the flour mixture. Repeat so that each piece of chicken is double coated. Refrigerate the breaded chicken for 20 minutes.
Step 2: Fry chicken in the hot oil in batches until the outside is nicely browned and the juices run clear (about 5 minutes per batch). Drain on paper towels. Repeat until all of the chicken is gone.
Step 3: Mix fried chicken bits with your favorite wing sauce (sauce recipes found below).

Now, here are the sauces. The sauces can be prepared in advance or while the chicken bits are frying. I have recipes for 5 different types of delicious wing sauces. Most of these sauces will make a lot, so they will be able to cover large batches of boneless wings.
Buffalo Wing Sauce Ingredients:¼ cup hot pepper sauce
1 tablespoon butter
Step 1: Combine hot sauce and butter in a small bowl. Microwave on high until the butter has melted (about 20 to 30 seconds). Mix well. This recipe can easily be double if you are making a large amount of wings.

yes,
i had one of those today.
kenny looked right at me, made eye contact and smiled. he usually just smiles in my general direction. the eye contact is what made it so special for me.
i can’t really explain the feeling but i’m sure all you mom’s know what i’m talking about.

worst moment of my life...
so far.
last night kenny and i were lying in the couch, he was sound asleep. i wanted to text my mother so i grabbed my cell phone and with my clumsy butter fingers, i totally dropped it on his head! he cried really hard. i felt so bad...i started to cry too. it was AWFUL!!!!!
thankfully he's forgiven me with lots of smiles!
today is beautiful! we're going to go for a nice walk and i'm pretty excited!!

meet my silly, sweet, stinker!

kenny has been discovering new sounds that he can make.
he is quite the talker.
lately he's picked growling when he's hungry.
i'm certain he learned that from his cousin todd who growls when he's eating something yummy!
hahaha!!!
today he was totally gurgling his milk, smiling and then he would spit it out....yeah...
he's a stinker.
litterally!
he loves pooping in a fresh clean diaper.
which means i change him, he immediately poops in the new diaper, then i change him again.
this all happens within 5 minutes.
yeah, we're going through diapers pretty dang fast.
good thing he's soooo cute!
one of my favorite parts of the day is early in the morn (when i say early it's usually around 8 a.m. hehe) when kenny first wakes up and i'm changing his diaper and getting ready to feed him, he is just so happy and so smiley.
i almost want to cry i get so beyond happy!
i just love those smiles he gives me so generously!
he looks at me and i love it when we make eye contact.
that doesn't happen very often but when it does, WOW!
yes, i love this boy!
i am so very blessed!

where are the days going?!
Time is completely flying by and it is doing so without my permission! Kenny will be 3 weeks old this Sunday!
I am having so much fun with my new baby boy! He brings so much joy and happiness to our family! We've been very blessed with a good sleeper, good eater, good pooper, good tempered, healthy, smiley baby! He's soooo smiley and he talks and coos a lot! He's taken up his daddy's habit of sleep talking. haha. I just wish I knew what he was saying.

So I started working out today. My post pregnant body is depressing. Blech! I did some light pilates and it was actually very enjoyable! Mick and I also went for a walk with Kenny and Chaz. I love this warm weather! The sun is very good for our moods! Especially mine....and Chaz's. Lol.
We are so looking forward to Spring!

Chaz Rupert Swenson
I should have posted this 3 weeks ago but I was a little distracted with it being my last day being preggers...
Chaz recently celebrated his 1st birthday! He's growing up so fast! hahaha. Here's a little "Chaz 101".
Chaz was born February 19th, 2010.
He joined our family June of 2010.
He loves playing fetch. His favorite toy is a blue squeaky bone that Debbie got him for his birthday!
Chaz LOVES going for walks.
He LOVES getting treats and will beg for them.
He really enjoys a good ear rub.
Chaz is super duper smart. He can do many tricks some of which are rolling over, sitting up, standing, walking, jumping on his hind legs, and the basics of sitting, laying down, and staying.
Chaz is extremely spoiled. (Probably because he's so cute!)
He is pretty careful of strangers and...okay okay...he's terrified of new people. He really doesn't care for them too much. He does however LOVES kids and babies! He's very curious of the infants and usually just wants to lick their fingers.
Chaz has the best personality. He understands words and he always pays attention to what you're saying (unless you're yelling at him to come back inside from being outside when it's particularly sunny and warm out...selective hearing).
He loves to run full speed in circles around the house. It's hilarious!
Chaz really loves hunting grasshoppers!
Chaz puts himself to bed. He prefers a 9:30 bedtime but will wait up with us till about 10:30 or 11:00.
We sure do love our Chaz and are sooo grateful he's apart of our family.
